How's your Cooking Schedule Going?

I'm on schedule! I as a surprise got the night off so rather than staying alone with the hubs we're going to my sister's tomorrow to eat with her and my mom... so I fast cooked the turkey breast I had on Sunday as soon as I found out (It was very tasty and herby!) and using what I'd already bought I offered to bring three sides tomorrow: Spicy broccoli gratin, roasted sweet potatoes with brown sugar and pecans, and roasted root veggie mix. The last two are so my hubs has some healthy things to eat. He's on a low cholesterol and low salt diet and my family is known for buttering prebuttered rolls then extra cheese on everything. Not exactly healthy fare.

Already steamed the broccoli and layered my pan, shredded my cheddar, and hubs did my veggie chopping. In the morning I'll roast everything and make the sauces!
 
Took a nap and now back at it.
The appetizer plates are mostly done and finally figured out how to make a small mold for the potato omelettes - a tuna fish can opened at both ends did the trick!

One dessert completed (Shaker lemon tarts) and decided to be bold and try two more. All are minis so require a lot of math. Sigh.

Still need to roast and assemble the meats and am sure I'm procrastinating putting the Wellington together, LOL. It's not hard honestly but still no decision on how to decorate the puff pastry. The turkey thighs for sister annoyed me a bit as they are both boneless and skinless. Decided to make a stuffed roll and wrap a bit of duck fat atop as a form of barding. Not traditional but hopefully she'll be happy.

@DuskKodesh- I made a roasted turnip, apple, and potato mash since it was healthier (no cream or butter) and DGD ate half of it whilst "helping" me. Should have known the raw Brussels sprout eater wouldn't be able to resist the temptation, LOL. Fortunately, the market was still open and I had an orphan apple half left in the fridge so back up to the original amt;).

@fla4fun - Rooted around the fridge and made a ramen noodle soup with spinach, corn, roast chicken leftovers and an egg. Anything to use up leftovers and eat light before the holiday. Heck, I can almost see the back of the fridge for one shelf at least.

We are just having the 5 of us but I had planned to go all out to make it special.
I bought a turkey breast for me since no one else likes it. Also need mashed potatoes, stuffing and corn for what I consider thanksgiving dinner. Dh and the kids want ham and Mac and cheese so I’m also making that.
I like dinner rolls out of the package, they like crescent rolls out of the oven.
I have worked all week and never got around to prepping anything. Oops.
Once everyone wakes up I’ll start making everything. At least with just our family there is no pressure if something doesn’t turn out right or I run out of time to make everything.
 
Happy Thanksgiving! Yesterday I made the chocolate pudding pie and a homemade pepper cheese spread. DH made pickled mushrooms for the first time. Today I have to make Mac n cheese and fresh broccoli with cheese sauce and DH will make the mashed taters. Turkey going in the electric roaster . Blueberry pie is store bought.
 
Have made the broccoli casserole and stuffing to reheat tomorrow. Rest will prepare tomorrow
We host Coast Guard recruits and my Dsis shares the work And expense. There will be 6-7 people

Chocolate Chip Cookies ( I made)
Ice cream, Graeter’s from Cincinnati....we live in NJ so ordered it
Fresh oranges

The recruits are in Basic Training, and we always ask them for their preferences regarding snacks, beverages etc. They are not allowed to go to any public places, so DH takes their orders and gets whatever they ask for. We are of Polish heritage so that’s why we include some ethnic foods.

We save the pierogi and kielbasa for Christmas since Thanksgiving has so many other great foods. I wish that I lived in a city where I can go and buy chrusciki. They are a pain to make. Now I am hungry for a Polish Christmas. LOL
 
Rolls are out of the oven.

Potatoes are on the stove to boil. They should be done just in time to get ready to make the 8 mile journey to my parents house.

So much food left here even with 9 of us and the teens eating multiple plates. MiL brought 2 pumpkin pies and a smores pie, SiL brought apple/cranberry pie and rolls and they both brought a couple bottles of wine.

French toast casserole for the am, along with mimosa's-no Black Friday shopping here!
 
All went well here. Except for the driving rain DH had to drive through to pick up his mom and bring her here (and back).

Only negative (in my mind, as the cook) not enough salt in the mashed potatoes.
