I'm splitting my stay WDW first then Universal for Easter weekend. How many days should it take to really try everything once or twice?

We'd also like to spend a day at the hotel enjoying the pool, play bocce, etc. So could someone recommend how many nights I should book?

With FOTL privileges, 2 days, 1 night should be plenty in my opinion although others here may disagree. If you want to enjoy a day at the hotel, then you may want to add an extra day although if you rush a bit, you could probably hit all the major stuff in a single day since you won't have much of a wait at many rides.

What time of the day are you arriving? This tells me when your vacation starts.
Renting a car? This tells me if you can make it to SWF early in the morning, otherwise, you'll have to take the free shuttle, which arrives SWF around 10:30am with more crowds.

It's almost worth checking into a budget hotel the night before if you are flying in. Then you can check into the onsite hotel, get your magic keys, and visit a park.

I'd say 3 nights, 4 days.

Each day can be split into 3 parts, morning park, afternoon rest, and night park.

The rental car will let you drive to SWF early in the morning,

And what time of the day is your return flight leaving?

FOTL works the day you check out, so you could visit a park in the morning, check out, drive to the airport, and catch your flight home late in the afternoon.
