How many credits?

We will soon be staying 7 nights at WDW on the DxDP, but we have 8-day park hoppers. So, my questions is do we have meal credits for seven or eight days?

7 nights = 7 days of credits.

Your tickets have nothing to do with it - it's all about how many nights you are staying in the resort. So you get credits based on 7 nights.

You will receive your entire pool of credits when you check-in. You will have until Midnight of your check-out day before the credits expire. So on your eighth day, I presume it's your check-out day, if you still have credits, feel free to use them.
