We bring a midsized backpack that has mesh pockets for water bottles. We no longer bring a cooler. I bring one water bottle for each of us (me, DH and DS). If anyone wants anything else to drink, we just buy it.
In the backpack, I bring one change of clothes for DS, wipes, ointments and necessary meds, camera, wallet, cel phone. That's it.
Also, since we usually take a mid-day break, we don't need to schlep a whole day's supply of anything. We just go back to the room and load up again. Also, I tend to just wait til I get back to the room to have a soda. Or I'll bring one back with me and drink it before we enter the park or soon after entering.
Bringing snacks has turned out to be unnecessary for us since DS and DH really only want to eat ice cream. I might sneak in a small bag of cookies or something, but honestly, I'd rather just eat a churro! I budget in-park snacks into the food budget so it's not a problem.
Having the one bag means we can trade off and we usually get enough of a break from it that it isn't a hassle at all.
