How far ahead to add DDP?

What is the last possible day we can call member services to add the Disney Dining Plan?

My aunt is letting us use her DVC points for a stay at OKW in May. We have already had one change on the people coming so I don't want to keep bothering her to call member services to change things.

Also can someone please verify that we do not have to pay for DDP until check-in?

You do not pay for DDP until you check-in. Member Services usually requests you let them know you want the DDP about 3 days in advance of your arrival.
