How early does Minnie Van service start?

I am thinking of using the Minnie Van to get to our early MK breakfast. What time do they start picking up? Can I schedule it the night before?
We have breakfast at Crystal Palace at 8:20.

You cannot schedule in advance (unless you need the ones that can accommodate a scooter). They are on-demand only. You should be able to get one in the morning.

I believe they start at 6:00 or 6:30. Plenty early for any ADR

It’s 6:30 am unless something has changed recently. I asked when we used them in October. Not sure what hotel you are staying at but dispatch from a lot in Disney Springs so they are close to the Disney springs/Epcot area resorts that early in the morning.

Minnie Vans currently serve all Deluxe Resorts and Villas (which includes Old Key West and Saratoga Springs).

You use the Lyft app not Uber to book them but you have to be activated to see the Minnie Vans as a booking option.
I got an invitation to activate the Minnie Van service in the lyft app from MDE app. The invitation appeared the day before we left for BWV if I recall correctly.
Yes you can take it to and from Disney springs-you would just have to book a return trip via the lyft app when you want to leave (assuming one is available).

They will take you anywhere on Disney property. What you want would be $40 since it is two trips.

Finding ourselves needing both a car seat and ECV transportation for 4 when we go to Animal Kingdom from Beach Club. Can I request it the night before for an EMH trip? Thinking we'll want to leave at 7:30 for an 8a EMH.
