Is this your first cruise? If it's your first cruise you won't be able to book your excursions until 75 days before your cruise starts. It doesn't matter if you paid off early, still have to wait the 75 days. The booking info won't show up for you on the site until then either. If it's your 2nd-5th cruise it's 90 days, 6th-10th is 105, and then I think after your 10th cruise it's 120 days, not sure about the last though.
If it's within your 75 days, it's under the My Disney cruise at top of homepage. That section has links for the activities that you want to book on ship and at ports, and also for the online check in.
Also, realize that you don’t have to do excursions through Disney. You can see the list of excursions DCL offers and also price them out and research similar / same excursions using this and other cruise forums to start.
It can be a polarizing topic; the short of it is that Disney excursions are guaranteed and you’ll never miss the boat (figuratively and literally), but more expensive (sometimes significantly so) than for the same experience out of the Disney-only group. Disney is basically the middle man for the independent operators, with guarantees.
If you sign in to my cruise on the disney cruise website it should tell you what date you can check in to get your port arrival time and also book excursions and book ship activities such as character visits and alcohol tastings
It's right there on the screen that has your cruise reservation details. There will be a line that says "Activities: Pay in full to start booking..." with the date.
Not necessarily - if a DCL excursion is delayed so much that it will affect the ship's arrival in the next port, then Disney reserves the right to leave passengers behind, but will be responsible for accommodation and travel related to getting them to the next port-of-call.
