How crowded is opening day of Flower and Garden Festival?

We are only planning on 2 or 3 days of tickets for the whole week that Flower and Garden Festival starts, so we were thinking Monday and Wednesday as park days to take advantage of extra evening hours (it's our first time staying deluxe!) Wednesday is opening day of Flower and Garden, so will it be really crowded at Epcot? Would Thursday, Friday, or Saturday be a better Epcot day? We definitely want to go to F and G for the topiaries and the scavenger hunt.

In 2019 I didn’t pay attention to the event schedule and ended up at Epcot for the first day of the Flower & Garden and it was much busier than I ever experienced at Epcot. But the whole week might end up being that way…
