How are these dining plans?

Please let me know if you think I should have more ADRs in here.... my concerns are in bold. background, we are going a Wednesday afternoon-Sunday (late departure) in summer with me, dh, dd6 and dd3. The selected character meals (crt, bon voyage brunch, Disney jr character brunch) are non-negotiable for my crew ;)

First afternoon MK: quick serve dinner at Columbia Harbour House
Day 2 (Epcot): bon voyage breakfast at Trattoria al Forno; lunch/dinner just munching around Epcot world showcase Will this be enough food? Will we want to sit?
Day 3 MK: lunch at CRT, dinner at earl of sandwich in DS or will the wait be insane? Are adr better for DS?
Day 4 (dhs): character brunch Hollywood & vine. Should I make sit down reservations for late lunch/early dinner? I’m worried about lack of options at dhs that are in a/c. Our other option is to eat dinner at the resort (OKW for now, possibly BWV or AKL if they have availability when I’m eligible to switch next week)
Day 5 (AK): quick serve lunch before heading to airport or should we do character meal brunch at AK?

Edited: this is not our “once in a lifetime” trip. We are lucky enough my parents are dvc members. While we’d like to maximize park time relatively, it’s more of a “hit the princess/Disney jr. attractions”, and I’m no stranger to the summer heat in FL so I want to be realistic with needs for sitting and breaks.

I always like CS my last day, so I would pass on character meal at AK. Epcot will be easy to find food to much on. You can find a good TS or CS for what you looking for. Look around world showcase you will run into something. Any preference of food for Epcot? I love earl of sandwich, stay with that it will be busy but you should be fine. It is worth the wait. I didn't like Hollywood and Vine but good luck with it. Not my choice. If I want to eat TS at DHS I would go to Hollywood Brown Derby. That's a great place to eat at. Hope this helps.
 
If you are wanting Disney Junior characters at Hollywood and Vine, they are only there at breakfast. Mickey, Minnie, Donald and Daisy are there at lunch and dinner. We just got back and surprisingly H & V was our favorite meal all week!! I was really worried about eating there, but we all thought the food was so good and the characters were wonderful (we were there for dinner)!!

Tusker House at animal kingdom used to be one of our favorite breakfasts/brunch, but we did not enjoy it at all last week. The food just did not taste fresh or warm. They also didn't have the variety that they used to have. Several of the "stations" had the same food items. I would definitely skip this on your last day.
 
Thanks! Yes, H&V will be breakfast/brunch for Disney jr. I know the food may be mediocre but we are going for the characters. I like the thought of skipping a TS on departure day.
