I don't think my first loaf of gluten-free bread is going to turn out right. :(

I bought a Breadman bread machine, as it has a gluten-free setting.

Yesterday I bought all the ingredients (rice flour, soy flour, xanthan gum, etc.) that I would need.

I thought I carefully measured everything out, making sure to get the right amounts of everything but it didn't "look right" from the get-go in the machine. Never did form a nice ball shape. It's baking now and it certainly isn't a uniform loaf. :( I think it's going to be a crumbly mess when it comes out in half an hour. :(

So disappointing. :(
 
Although I don't bake gluten free bread I do bake a lot of regular bread. The best advice I can give is practice. The recipe you have may not be optimal for your ingredient/climate/machine combination. Summer humidity can have a significant effect on baked goods. Do some web searches on the subject and see what factors can be adjusted to rectify the problem you ran into.

Oh boy ... you're NOT alone!! My poor mother has been busy "perfecting" her bread for years now. I think she finally has it down now. I will try to get the "recipe" or info for you.

Making gluten-free bread is definitely a tricky thing. It's not easy either.

Don't be disappointed ... it's not you. It takes a long time to get it right.

I would love to have her recipe, if she will share it.

It's just so annoying to waste all those ingredients and have it turn out terrible!! It was all crumbly looking in the machine so I knew I wasn't to bake up right. It didn't fully bake, still doughy. The only good thing was it made the house smell good while it was baking! :laughing:
 
She will have no problem sharing the recipe with you. It's GETTING the recipe from her that will be more difficult. She lives in Florida and is currently recouperating from a surgery ... hopefully she can think of it and just text it to me. :confused3

Some idea's: you might want to switch Garbanzo bean flour for the soy. I personally have never had any luck with soy flour

I go to that web site occasionally, lots of good info. :) I will have to try the garbanzo flour. It certainly can't hurt, ha ha! I hope I can find a use for that 4 pound bag of soy flour I bought. I had hoped for a smaller amount, but that's all the health food store had. :(
 
Sorry it's been a while ... Mom's doing WAY better now and has given me the recipe she uses for bread. Like I said, she's been attempting to make her bread better and less crumbly over the years and finally has something she actually likes. Hope it works for all of you out there!!

OK -here goes!!

3 cups of Betty Hageman's 4-blend flour (the best I have found)
3 tbls of sugar
1/2 teas of salt
2 teas. egg replacer
1 tabl. of yeast

Mix in bowl by itself - stir well to blend items. Separately fix 1 1/4 c. water
4 eggs
blend together well
Add 4 teas. oil
1 teas, vinegar - blend well again.

This is for my bread machine - put liquid in first, then dry ingredients and set machine for only one rising/baking.

Its not perfect but it sure is the best I've found yet.
