I don't think my first loaf of gluten-free bread is going to turn out right.
I bought a Breadman bread machine, as it has a gluten-free setting.
Yesterday I bought all the ingredients (rice flour, soy flour, xanthan gum, etc.) that I would need.
I thought I carefully measured everything out, making sure to get the right amounts of everything but it didn't "look right" from the get-go in the machine. Never did form a nice ball shape. It's baking now and it certainly isn't a uniform loaf.
I think it's going to be a crumbly mess when it comes out in half an hour.
So disappointing.
