Help Me Plan a Surprise Trip!!!

Ok so I keep making threads with different questions.. So decided to put the rest in one spot..and hopefully get some great advice!

This is a surprise trip for my son..early gift from Santa that he will receive on the last day of our cruise.

Dates- 12/3-12-7
Resort- CR tpv
Number of guests- Myself and my 6 year old boy.
Arrival time- whenever the Disney shuttle gets us there..hopefully before 11am.

Parks- MK, Epcot, HS (skipping AK this trip)

Help me figure out which park on which day and dining please!

Dining "to-do" choices so far-

1900 Park Fare breakfast
Whispering Canyon lunch (or dinner)
BOG breakfast or dinner
Ohana or Kona Cafe depending on time of day...maybe neither and just Trader Sam's.
F! Package at H&V dinner
Check out day- Chef Mickey's breakfast

Thoughts?

What would you do on arrival day (Saturday). Rather not do MK..thinking of Disney springs, maybe Epcot, but back to room in time for wishes?
