Help-I am having brunch at my house for Mother's Day!

Okay I could use some help. I am having brunch at our house this year. It is the first Mothers Day since DH and I got married last year (we were still on our honeymoon in May 2004) so we wanted to have something at our house instead of my mom cooking dinner for everyone. It is a surprise so I cant ask her for help like I usually would!!!
There will be a total of 8 people-4 of them are men who eat a lot. So what should I make/have? Any suggestions are greatly appreciated as I haven't a clue! :confused3

Some ideas:
juice, coffee, tea
bowl of cut-up fruit (watermelon, honeydew, strawberries)
Bagels and cream cheese
muffins
some type of egg-bake casserole. I'm terrible at those so I'll let somebody else give you a recipe! :)
hash brown casserole
We've done belgian waffles for a group of 20 before and then put them in a roaster on "warm". They did get a little limp though.
I have a recipe for an overnight french toast with blueberries. Let me know if you want it.
 
I made this awhile back and it was yummy - can be made the night before & baked before serving:

Apple Raisin French Toast Strata

(In reading all the reviews, I followed advice to reduce amount of eggs to 6, and spread cream cheese from a tub on bread slices THEN cube them - much easier & faster!)

I have a recipe for a delicious Praline Baked French Toast that you prepare the night before & just pop in the oven in the morning. Let me know if you'd like the recipe, it's really easy!
 

Here's an easy one, and you can make them ahead:


Sausage Pizzas

1 package cocktail rye bread
1 lb. pkg pork sausage
1 lb. pkg velveeta cheese, cubed


Brown the pork sausage and drain well. Stir in velveeta until melted. Spoon about 1 tablespoon of mixture onto each slice of cocktail rye. At this point I usually place them on a cookie sheet and freeze them, then place them in a ziploc bag in the freezer. To re-heat, bake for 15 minutes (from frozen) in 450 oven. They make a great appetizer too, but they are best for breakfast!
 
You could also do a small ham and have soft rolls or croissants for sandwiches. Some veggies and dips. Crackers and cheeses. Cheesecake or carrot cake.
Since brunch combines breakfast and lunch, you can have non-breakfast foods as well which should satisfy the hungry men.
 
Try searching cookinglight.com. there is a breakfast casserole with sausage, eggs and stuffing that is out of this world. Not sure what it's called though sorry :(
 
i have often made a very simple egg dish that usually gets a lot of compliments

in a baking dish layer
hash browns (can buy in the refrideratored section)
browned sausage (as in - precook sausage)
shredded cheese (i like a mixture of cheddar and moz)

that part can be done the day before

then preheat oven to 375
beat together 6 eggs and 1/2 cup of milk
pour over potato/sausage/cheese mixture

bake for 30 minutes
serve with bisquits
