Help!! Dining and Express Pass Questions

I have been a member of the Dis for a few years and have spent a lot of time at WDW, but we decided to try Universal for a few days this year (and skip the parks at WDW). Since this is new territory for me, and I'm not finding quite what I'm quickly looking for in the search, I was hoping someone might answer a couple of questions for me to make sure I have the correct understanding.

Firstly, do 3 Broomsticks and Leaky Cauldron take reservations at all, or are they walk-up only? If we intend to eat there, how long should I budget to get through the line and receive food?

Second, I'm planning to stay onsite because of the express pass. If I have the express pass, can it be used on anything HP, or strictly other rides (I'm seeing different information than I was given, so I want to confirm)? Is the only advantage for HP staying onsite the early admission?

Can all of Universal be done in 3 days or should we budget more time?

Leaky Cauldron and Three Broomsticks are counter service restaurants with no reservations.

Express cannot be used at Forbidden Journey, Gringott's, Pteranodon Flyers, Kang's and Kodos. Early admission is an advantage for the HP rides.

You will be just fine with 3 days.
