I would also make a list of all must ride rides for your trip before Mesaboys list is reviewed. Just because Toy Story is a A rated ride doesn't mean YOU actually want to ride it. I mean you likely do but in parks like Magic Kingdom there is a lot of top FP+ rides to choose from.
Epcot is not so much about FP attractions. It's more walking, viewing, shopping, learning. We often spend quite a bit of time looking at all the critters in the Living seas. There's usually a short line for Nemo ride, which is the main way to enter, but after Nemo, most the critters are just walk and view. So it's not hard to pick thee FP. There's really only two FP attractions: TT and Soarin'. Sadly, you can only FP one.
HS, and AK have great rides, but not all that many. AK has lots of animal exhibits to see. HS has several shows...We usually consider HS a 3/4 day park. At AK, know that Kali is a rather wet raft ride. Usually one/two people on the raft get drenched. You may want to pick the time you ride it carefully.
Also know that in summer months, late afternoon thunderstorms are common. It also gets hot and humid. Evenings are nice. In winter, mornings can be quite cool.
Some folks like to get FP's done fairly early, others like to schedule lots of table service meals...it kind of depends how you'd like to spend your time. Arriving early is often helpful, but not essential. I think one key to happy touring is knowing your group. If they aren't morning people, they aren't morning people. If they aren't night owls....Many folks are strict to eat lunch at noon.
Also decide if parades and fireworks interest you. You also likely have to kind of prioritize rides vs. characters. You can do some of both, not every ride and every character all in one day.
DO NOT obsess over the idea of trying to do everything. You'll likely see most nearly all you care to see, and cover lots of ground, but you can't be 50 places all at once.
