Oh that sounds so good. How do you make it? I am always looking for new ways to cook chicken.

Good night, Michele. Here is the recipe you asked for.

Sprinkle salt, pepper and poultry seasoning on chicken pieces (any type will do tonight I cooked boneless chicken breast). Brown chicken pieces in a frying pan with olive oil, both sides. While chicken is browning, mix apricot jam with balsamic vinegar until well blended. The amount depends on how much chicken you are cooking. I only had three pieces, so I mixed 1/4 cup of jam with 1 tbsps of vinegar. Add chicken stock (you could use water) enough to thin the mixture. You will have play around with this part, depending on if you like a more sweeter taste or more of a vinegar taste. When chicken is brown on both sides, remove chicken from the pan. Add in slices of garlic and rosemary chopped in small pieces (dry or fresh it doesn't matter) to pan and heat in remaining oil until garlic is slightly warmed. Add the jam mixture to deglaze pan. Add chicken. Heat in high until the mixture is thickened. Serve.

I have also added slices of onion and carrots when I cook the garlic to add some vegetables and served with rice.

Sorry this is so off the cuff. I got the inspiration for this dish from Rachel Ray, but I added so many of my own twists, that the original recipe would not apply. Hope you like it.

Alright. I know I sound a bit ridiculous, but is your weather normal for this time of year? Believe me, if 85 degrees was normal for January here in SoCal, I would not rant so much. It is a bit weird trying to find my shorts, sunscreen and remove my down blankets in January when we just had tons of rain and freezing cold weather. It is just weird I tell ya.
 
Well I am doing the happy dance. Booked a two bedroom at the VGC today for Dec 18 to the 21st. Now I've got to figure out how to do the ticker sig. Anyone can help?

Sounds wonderful. I think I may be cooking this for dinner. I so get adding your own twist to recipes. I do it all the time.:thumbsup2

I totally get what you are saying and I can't help but agree about the seasonable bit. And frankly 85 in January is ridiculous. I heard earlier that it is was in the mid 60's at Lake Tahoe that is totally wrong. It should not be that warm at all.

Sweet!! I use the tickers at **************. I used to stick to the name badge ones but they take up a lot of space and our signatures can on;y be so mny lines long so something would always get cut out for me so I just use the small countdown strip nowadays.
