Its the penne pasta with chicken from Olivia's. Its not the sort of thing I usually order when I eat in a restaurant...but dh wanted to try it for dinner tonight. It was excellent! Easy to make too...just grilled chicken, made the pasta, grated cheese and tossed it all together.

So if you have not tried the recipe that's in the newest Vacation Magic...try it!
 
Actually, I like that sort of thing, and I ordered it last May when we ate at Olivia's. I thought it was sort of bland, but I may give it a try. Sandie
 
Haven't made it yet, but I HAVE tried it at Olivia's. One of my favorites, so I'm looking forward to trying the recipe.
 
Hmmm...my version did not turn out bland, but I do tend to season things pretty liberally. Raw garlic gives it quite a kick...perhaps they use the jarred garlic at Olivia's? Mine was freshly pressed...used about 4 cloves.

I don't think I'd order it there since I can make it at home now! For whatever reason, though, I don't often order pasta dishes at restaurants....kind of weird really, since I like pasta.

My dh and I determined that we could put significantly less chicken and not quite as much cheese in it to make the recipe a bit more economical and we'd like it just as much. Oh, I did use less spinach...we had used part of a bag of baby spinach earlier in the week, so I just used up what was left. It was a bit skimpy on the spinach...but I think the recipe really called for a lot.
