I wouldn't go by the date on an egg package. Fresh eggs will typically last 2-3 months. At this point, unless you're getting eggs that were shipped in from out the country, and have been sitting in a port or something, you're probably getting fairly fresh eggs when they come in. It's easy to tell if an egg is fresh or not - if it floats in water, it's not fresh. It's still not fresh, but it's not necessarily bad.
You can also easily freeze eggs. Break each egg into a small bowl, and whisk lightly. Pour each egg into a compartment of an ice cube tray to freeze. When frozen, transfer to a freezer bag or container. Works perfectly for baking, scrambled eggs, etc.
