Has anything changed at your grocery store ???

During the pandemic, Wal-Mart cut way down on the variety of brands and options of the products they were carrying. Several other large grocery grocers who compete on price have done the same thing (if they haven't gone out of business, which in my area, all of them have, except Aldi.)

We have a couple of regional chains here who like to go for the Publix-type strategy of being the "friendliest" store or having the best produce quality. They still have a lot of variety, but I personally cannot afford their prices for my regular shopping. I go in about once per month to pick up a couple of items that I cannot get elsewhere, and usually spend about $40 on that, because the items I'm after are mostly shelf-stable & I buy multiples.

PS: Large house-brand eggs at my nearest WalMart are $6/dozen right now, with no discount for quantity unless you buy an entire case (15 dz). At the "friendly" store they are about $7.85/dz. Free-range will cost you close to $10.

Walmart around here has not had eggs in recent times that are dated out far enough that i'm willing to do anything larger than 18 eggs. I used to routinely get the double 18 packs b/c they were good for 6'ish weeks but now you're doing well if you can find some there that are 2-3.
 
I wouldn't go by the date on an egg package. Fresh eggs will typically last 2-3 months. At this point, unless you're getting eggs that were shipped in from out the country, and have been sitting in a port or something, you're probably getting fairly fresh eggs when they come in. It's easy to tell if an egg is fresh or not - if it floats in water, it's not fresh. It's still not fresh, but it's not necessarily bad.

You can also easily freeze eggs. Break each egg into a small bowl, and whisk lightly. Pour each egg into a compartment of an ice cube tray to freeze. When frozen, transfer to a freezer bag or container. Works perfectly for baking, scrambled eggs, etc.
