DH made some loaves and I made about 5 dozen muffins that we froze. We had about 31 pounds to process one day last week. I've also made "Pineapple Zucchini" which is shredded zuchini canned in a pineapple/lemon juice/sugar mixture. It tastes just like crushed pineapple and can be used in the same way (upside down cake, cheesecake, etc). I have about 20 jars of that now. Talk about saving some money! I also have pickles to process this week. The zuchini can be made into pickles, too, but I haven't done many of those. I have dried a lot of it - with dip, dried zucchini/yellow squash tastes as good as potato chips with no fat and very few calories!
I've frozen beans and now broccoli (that was a little gross - there are bugs that need to be removed -DH is a great sport). We're hoping the tomatoes will start to ripen soon so we can get the salsa and tomato sauces made and canned before we go on vacation. Between the couponing and the garden, the stockpile is building quickly. I never have to buy pickles or pickle relish again!!!
