Green Tomatoes? Make a cake!

If you have any green tomatoes left, you may want to try using them in a cake. :) If you try this, let us know how it tastes! :)

Green Tomato Cake

Makes 2 loaf pans or 1 bundt cake pan.

1 Cup vegetable oil
1 3/4 Cups sugar
3 eggs
1 tsp vanilla
3 Cups all-purpose flour
1 tsp EACH baking powder and baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 tsp powdered ginger
2 Cups chopped green tomatoes
1 Cup raisins
1 Cup chopped walnuts

Cream together oil, sugar, eggs, vanilla.
Sift dry ingredients and add to egg mixture, combining well.
Add tomatoes, raisins, walnuts.

Bake at 350F for 1 hour.

How about some marmalade? :)

Green Tomato Marmalade

3 Quarts seeded and sliced green tomatoes
6 Cups sugar
1 tsp salt
6 lemons
2 Cups water

Mix tomatoes, sugar, salt, in large saucepan. Set aside.
Peel lemons, remove any white part, slice peel into thin slivers. Boil peel in water for 5 minutes. Drain.
Add peel to tomatoes.
Slice lemons, remove seeds, add to tomatoes (be sure to remove any white membrane).
Heat tomato mixture to a boil, cook rapidly, stirring almost constantly, until thickened. It will take 45 minutes or more.
Turn marmalade into hot, sterilized jars.
Seal. Store in a cool, dark place.

Makes 5 pints.

Wow, I have never heard of using tomatoes in a cake, but I'm interested in finding out how it tastes.

If I had some green tomatoes I'd try the cake, but pass on the marmalade. I've never been a fan of marmalade.

I don't think Tomato Cake would be much different from Zucchini Bread or Carrot Cake, that sort of thing.

I don't have enough for a cake, but we do have fried green tomatoes once in a rare while. DH actually prefers fried red tomatoes. His DM made it for him when he was growing up, and so, every so often he has a craving for them. His recollection of just HOW his mom made the tomatoes is fuzzy, sometimes he thinks she used to bread them, sometimes flour them, sometimes the red ones are too watery, but still, we think of his mom when we eat them and smile! Memories that are linked with food are special!

Actually, anything to do with food is special. :o :D Yes, I like to eat, although I've never had fried green tomatoes. Loved the movie though! :teeth:

I have tons of green tomatoes this year! My kids always request the green tomato cake! I don't know if it is the same as above, but it is very simalar. It is like a spice cake! Make it with cream cheese frosting (like carrot cake) and the family will rave!::yes::
 
I've never heard of green tomato cake! I might have to try that next year. :D
I, too, love fried gren tomatoes! I hate to fry anything in my kitchen (mess everywhere...), but these are worth it.
I've never fried completely red ones, but the in-between pinks fry up really well. I just slice them, salt and pepper them, dredge them in self- rising flour, then fry to a golden brown. Yummmm!!

Thanks Kim! I have made and tasted green tomato cake! It tastes like carrot cake and lookes like zuchinni bread! (if you cut the tomatoes in small pieces.( you really don't taste tomato.) It is really good! :Pinkbounc :bounce: But I would take chocolate over it any day! lol
Drumflower is a combination of me and DH. I am the gardener, and he plays and sells drums. I thought the name was neat because as far as I know there is no such thing as a drumflower. :teeth: (plus dh is a big help in my garden). He dug my pond this year which is over 3ft deep and helps dig up the turf so I can plant flowers instead ! We offically have no grass in the backyard as of this summer! Now I have to work on the front yard next spring! :Pinkbounc :bounce: Sad note today: the frost got my pansies today so I have to wait until spring to see them again!:(
 
I actually looked up 'drumflower', just to check to see if one really existed...besides you, that is! ;) :D

How cool that you have a pond (and a DH who doesn't mind 'grunt' work! ;) ). Water features are so popular these days!! :D

Sorry to hear about your pansies. I usually plant icicle pansies in the fall and they hang on till the first good snow. I didn't get that done this year, though. :o
 
My pansies bounced back already! They were looking all wilted and they bounced back later in the day! We haven't had any snow yet which is very unusual for us. This is good since I have to clean up the yard!:(
 
My blanketflower still has a couple of blooms on it. I'm amazed! :)
