Fried chicken is not really one of the things that WDW is known for. Hard to do in bulk and really a bad idea to cook it in advance, which is what most casual dining locations do with their food. That said, 50's Prime Time is probably your best bet unless you are planning to do the HDDR.
The fired chicken at Trail's End (Fort Wilderness) is very good. They have a meal that includes chicken, two sides, and bread. The mac and cheese and mashed pototoes were delicious, too.
I agree the Fried Chicken at the 50's Prime Time is good as is the HDDR
However, if you are going in a few weeks, it is highly unlikely that you will be able to get into either of these.
If you are all adults you can sit at the bar at the Tune in Lounge, attached to the 50's PTC and order the Fried Chicken.
The Trails End Cafe at Fort Wilderness might be another choice.
It is nearly impossible to get into popular restaurants with just a few weeks notice.

I second Trail's End, we ate there last summer and loved it, sweet tea too!! It was nice to stroll around the fort, so pretty there, and then we took in the campfire singalong. Fun, relaxing night!
I forgot to mention in my earlier post that the fried chicken meal is available as a "to go" order. There is a place to order this, pizza, and several other meals to take with you. It's located inside Trail's End but uses another entrance besides the main one. So if you can't get a seat for the buffet, you can still enjoy the fried chicken!
I'd go with 50's prime time!!!! The chicken there is sooo good! Also Make sure you try the peanut butter and jelly shake... counts as a beverage if you are on the dining plan! They had to roll us out of there the last time I ate there!
I checked week of July 10th and there is PLENTY of availability!
I personally think the fried chicken at 50's was waaaaay too salty. And I love salty food!! Im thinking it could have been an off day since the table next to us complained about the same thing. But yes, the PB&J shake is AMAZING!!!!!
Also, DD16 really liked the fried chicken at Everything Pop at Pop Century. It isn't on the menu every day, however. It's a "mom's night out" on certain days.
50's and HDDR have great fried chicken. Trails End has the same chicken as the Hoop. If you can't get into Trail's End, you can get the chicken to go. There are picnic tables in the area. On a nice day it can be a pleasant meal. There is also a take out window in the bar at Trail's End so you can get an adult beverage to have with your meal!
