Unless you are switching rooms to a room with a capacity of 4 on the days when it is only 4 of you, the moderate rooms that sleep 5 will be best. The nice thing is that Caribbean Beach and Port Orleans Riverside are both lovely locations for resort-only stays (we did a 2-night CBR resort only stay). I haven't stayed in their 5-person room, but the Internet says the extra bed is 63 or 64 inches long, so depending on the age/height of your kids, someone may need to sleep on the floor. As an adult, I fit on the 5th sleeper at some of the DVC resorts, which is more like the length of an ordinary twin bed. The Ft. Wilderness cabins, while remote, sleep 6 and is a great place for a resort-only stay. There's also the All-Star Music suites that someone mentioned. Unfortunately, though Art of Animation is billed as "value," their suites can sometimes be more expensive than deluxe accommodations that sleep 5. There are suites at the Hilton at Disney Springs, but there is a resort fee there. If it is resort only, does it have to be Disney? We thought Universal's Cabana Bay was really fun and their family suites are much more affordable than Disney.
