Man, I miss sushi so much. It's on my list of "things to do the second this baby is outside my body".
I would probably order a bunch of different types of maki (rolls) - these will be closest in style to California Rolls and easiest for a "beginner" to eat and try different things. If you're not so into the raw stuff, futo (veggie - there are many different types, but a common futo maki has cucumber, japanese pickle, and fried egg in it) rolls are really good, as well as salmon skin rolls and anything with crab in it. Cucumber rolls are the most tame thing you will find on the menu, in most places.
If you are willing to try raw fish (and I would highly recommend it - I have gotten to the point where I believe that some fish should only be eaten raw), salmon rolls, tuna rolls, and spicy tuna rolls are pretty safe ones to try. If you like raw fish, sashimi is awesome - it's just a plate of sliced sushi-grade fish. Mmmmm. There are different types of sushi that use different parts or different grades of the same fish. For example, toro is fatty tuna and it is DELICIOUS. Regular tuna is also good, but it doesn't have the same melt in your mouth texture. Ask about anything you're not sure of.
Beyond that, each restaurant will have its own specialties - try anything that sounds appetizing! Some sushi restaurants have rolls that have been dipped in tempura batter and fried, "crunchy" rolls with tempura "crunchies" inside it, rolls with cream cheese fillings, etc. If it sounds good to you, give it a shot!
