In recent years I've done trips of:
8 nights (WDW, Discovery Cove & Sea World BUT we were already in the USA)
3 nights (Universal - but again already in the USA)
10 nights (Universal & Sea World)
9 nights (Universal)
We have never found oursevles short of time but we are young people without children. We cut down the last two trips - ideally we wanted two weeks, but it knocked several hundred £ off the cost of the flights. If you try to do EVERYTHING, you'll feel rushed, but since we only do Universal, we find it to be plenty of time (7 days of the parks + a few free days).
I've done trips from 3 nights to 21 nights and you ALWAYS want "one more day"...!
