I found a fabulous recipe for a sweet corncake (spoon bread). It is gluten free, dairy free and egg free. (I'm not allergic to any of the above.) I found it when I was looking for a recipe for ChiChi's Corn Cake. I tried many, many recipies and this one was by far the best - and really easy to make. It's become a favorite at my house...

Ingredients:
3/4 cup cornmeal
1/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup melted non-dairy margarine or oil
1/4 cup water
15 oz. can cream-style corn
Directions:
Mix all ingredients until combined. Pour into greased 9 x 5 inch loaf pan. Bake uncovered at 350 degrees for 40-45 minutes, or until liquid is absorbed. Serve as a side dish or dessert.
