We are having a friend over tomorrow who has a gluten free diet is there any kind of foods I would have in my house? I am planning skinless boneless chicken breast, and rice or potatoes for dinner, Do you have any snack or breakfast suggestions?

I have a cousin with Celiac disease and is gluten free. She likes the chips with the pink, flying pig on the bag. They are like tortilla chips. I can't remember their name, but she LOVES them. I think they have vegetable chips and I know they have fruit chips, because she had blueberry chips at her bridal shower. Also if you have salad, my cousin said she only uses the regular kind. Apparently, the lower fat dressings add something that she can't eat.

First of all as someone who is gluten free because of Celiac disease let me say that it is wonderful that you are going out of your way to make sure you provide safe foods for her! :thumbsup2 You are an awesome friend!

The fresher the food the better and easier for you to know it is safe. There are so many little things gluten can hide in. For someone who doesn't know what all to look for my suggestion would be for you to keep it simple. No sauces, no flavorings, etc.

The chicken and rice or potatoes sound great. Just make sure the rice isn't something like Rice-A-Roni which has pasta in it. If it is flavored rice you will have to check the ingredients so the potatoes may be a safer choice.

If she can have eggs and bacon or sausage for breakfast how about that? Or an omelette? Can she have cheese? Some people with Celiac disease can't have dairy. You didn't say that she has Celiac but most of the people I've met who are gluten free do. That's why I'm throwing it out there.

As for snacks, Orville Redenbacher (however you spell it) popcorn is safe - but read the box to make sure! Tostitos corn chips are safe. I don't snack much so I'm trying to think of what would be good. You could make some homemade guacamole to go with the tostitos if she would like that. Or you could make the Jalapeno Popper dip that was posted here on the boards. That stuff is awesome! I tried it because I've been missing poppers. YUM! It's gluten-free and AWESOME!!! Let me know if you want the recipe. It's very easy to make.
 
Thank you both for your suggestions, this is actually DD12's friend she will be spending the night (so she will be here about 24 hrs) I talked to her mother today and she just told me to cook my normal meal and the girl would know what she can eat from that, but I really want to try to cook things that she can eat everything. So I am going to do the chicken and rice for dinner we do have an air popper for popcorn, or microwave popcorn and we have tostitos corn chips, and then I will make bacon and eggs for breakfast.

We have the ingredients for smoothies too(bananas, strawberries, yogurt, ice cream, and milk). I will have to check if she can have dairy:confused: never thought about that.
 

I believe it is Betty Crocker who now makes Gluten Free cake mix that can be found in the regular cake mix aisle of a grocery store. They are great! My aunt made one for my mom (who is a celiac) last night for a dinner party and she loved it!

Don't stress too much, your menu sounds great! It is very nice of you to take so much of your own time planning - as a daughter of a celiac, I really appreciate it. :)

From my experience dairy products sometimes do contain gluten.
 
I found a fabulous recipe for a sweet corncake (spoon bread). It is gluten free, dairy free and egg free. (I'm not allergic to any of the above.) I found it when I was looking for a recipe for ChiChi's Corn Cake. I tried many, many recipies and this one was by far the best - and really easy to make. It's become a favorite at my house...

Ingredients:

3/4 cup cornmeal
1/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup melted non-dairy margarine or oil
1/4 cup water
15 oz. can cream-style corn

Directions:

Mix all ingredients until combined. Pour into greased 9 x 5 inch loaf pan. Bake uncovered at 350 degrees for 40-45 minutes, or until liquid is absorbed. Serve as a side dish or dessert.
 
There sell gluten free brownies and cakes. I think they are made by Betty Crocker. They are in the normal brownie/cake aisle.
 
The gluten free BC mixes the PP mentioned are AMAZING!!!! My BFF has Celiac's and for her bachlorette party we did wine tasting and had a limo, in the limo we had all kinds of snacks for us to have between wineries, we had Tostitos and cheese dip, we had spinach dip and gluten free bread (she buys her breads & pastas at a special gluten free bakery here), we had brownies too, I made brownies, both regular and gf, the gf BC mix was better then the regular brownies I made! LOL They were so good, pretty $$ but sooooooooo good!!!
 
fritos and cheetos are safe, Lay's Stax are safe. Pringles are not. most potato chips and tortilla chips are safe. Funyuns are safe - MIL uses them on her version of green bean casserole for the crunch.

Chex cereals are safe, except for wheat chex of course. you could make party mix with chex, GF pretzels and peanuts or mixed nuts. If you do the seasonings from scratch they are safe, i don't know about the packaged seasoning mix.

ice cream can be a good dessert option, make sure it's not cookie-dough or oreo and read the label to be safe.

tacos are a good dinner option too, just avoid flour tortillas. McCormick taco seasoning is safe, Tone's wasn't the last time I looked. I think the crunchy shells are safe - I know soft corn tortillas are.

Be careful making this for someone who is gluten-free because the cream-style corn may not be gluten-free. Some of these are thickened with flour. We only do homemade creamed corn now.

But I'm going to have to try this, especially since you said it is sweet. I don't care for cornbread but I might not mind this. I want some bread type substance that isn't weird! Thank you for sharing!

That reminds me that we made the Chex Muddy Buddy stuff. That was good! It was nice to have a chocolate snack. YUM! That might be something fun for your daughter and her friend to make together. It's very easy to make and oh so good! I'm lucky that Rice Chex was already one of my favorite cereals.

I've only ever seen gluten-free creamed corn. The store brand that I get is labeled as such. This recipe is nicely sweet - and very moist. My biggest beef with regular corn bread is that it is sooooo dry. Enjoy!

The dryness is why I don't like it either. I just checked my Gluten-Free Grocery Shopping Guide and they do list a few brands of cream style corn that are safe. Woo-hoo! Thanks for pointing that out. I guess we just had one that wasn't.
 
Thanks for all your suggestions DD's friend is here now we had the chicken for dinner and I think that went pretty good. Instead of the smoothies the girls made slushies with kool aid(I hope this was ok) and ice in the blender. I am going to offer them some popcorn, potato chips, or cashews soon. Then I will make bacon and eggs for breakfast, and then take her home right before lunch.

This has to be really hard for her and her family I sympathize with anyone dealing with this.
