We're from Canada and we're driving down taking I-75. We've done the drive several time, but we would like to avoid the FL Turnpike. What's the easiest/quickest way to do this?

May I ask why you want to avoid the Turnpike? The one-way toll from I-75 to I-4 is only about $3.

To avoid the Turnpike, get off I-75 at the US 27 exit in Ocala and then follow US 27 south via Ocala, Bellview, Leesburg and Clermont to US 192 in West Kissimmee. Then US 192 east to Disney. Lots of stop and go though.

The quickest, easiest way would be the turnpike,it's only about 50 miles that you'll spend on the turnpike and the tolls aren't that much.If you want to take a different route then just find your way to US 27 and take it south to 192.
