What’s for Dinner Tonight?


We grabbed a late lunch. For supper, we just snacked. Made sausage balls in the crockpot (put on before church, and they were ready when we got home). Had carrots with ranch, cheese ball and wheat things. Decided not to make the oven roasted potatoes we had planned. But had rolls and pecan pie to go with it all. Tomorrow we will have Saltgrass for lunch with friends (no family within 3 hours, so it's just DW and I).
 
We had our extended family get-together tonight. Some people wanted soups. Others wanted a meal. So, we had a little of both:

Ham
Mac-n-cheese
Green Beans
Vegetable Beef Soup
Lasagna Soup
Goulash
Baked Potato Soup
Chicken Salad Sandwiches
Sausage Balls
Ambrosia Salad
Cookies
Brownies
Chocolate Dump Cake
Upside Down Chocolate Cake
Banana Pudding
Birthday Cake for my niece who was born on Christmas Eve

I think that was it. A few people arrived very late after everyone had eaten & I didn't go back for seconds. I may have missed something they brought.
 
We had some of the family over tonight for dinner. My MIL, My SIL and BIL and his mother.

We started with an antipasto tray. then boiled peel and eat shrimp and my SIL made calamari. Then we had Chicken Parm and linguini.

Then we had cookies for dessert. Oatmeal cinnamon chip, chocolate chip, Pumpkin.
 
I'm going to pretend it's still Wednesday, Christmas Eve, when I write this. The plan for Christmas day changed, so I went from planning on bringing chips and popcorn to doing heavier apps. I decided on Christmas nachos (red pepper, green onions, white cheese), bacon wrapped scallops, charcuterie, whipped goat cheese, and a fruit try to take to DD's on Christmas afternoon, so I bought more scallops than we'll need and seared them with roasted garlic, lemon, white wine, and butter for supper on Wednesday evening. This was a mistake, as we hadn't even started wrapping before dinner, which we didn't eat until 7:30- and is why I am still up, writing this at 2am on Christmas day). However, all the presents that DH and I are giving each other are finally wrapped/bagged and under the tree. We'll wrap for DD/SIL/LittleGuy in the morning, once we (finally) wake up.
 
Merry Christmas to everyone. We're having late lunch at Saltgrass using a gift card and stacked rewards, so we won't have to pay anything. No breakfast, and we'll just snack on stuff we made last night (meatballs, cheese ball, veggie try, pecan pie) if we get hungry again. We started doing Saltgrass with friends for Christmas back in 2022 since we have no family nearby (3 hours away). We can't go home since we both have to work tomorrow.

I’m stuffing myself today.

Ate a breakfast casserole of croissants, Gruyère cheese, eggs and sausage.

Think I’ll have some leftover kale salad for lunch and maybe add some goat cheese atop. The lemon and garlic oil dressing was very nice.

Dinner will be roasted string beans, make ahead mashed potatoes and leeks with prime rib. Already took the beef roast out of the fridge so I could chill a bottle of sparkling wine; space is tight in the fridge. Dessert will be an individual Pavlova with sorbet and fruit. All components store bought: the meringue ring from Zabar’s, gelato courtesy of Talenti and fruit from WF.
