Getting out on Mon 10-24?

I'm not really worried at all about getting there but am somewhat concerned about getting home.

I wonder if I should extend our trip to Tuesday 10-25 now and avoid the potential delays and rush?

I'd just hate to have to stay an extra day!

You certainly can do that if you want right now, but whatever you do at this point is like rolling the dice. It's still too early to tell what effect the storm will have on MCO traffic and which day or days will be impacted the most.
