Fritatta type recipes for a crowd

I need to serve about 25 ladies for a baby shower brunch and I need an egg dish. I've made fritattas before in a skillet but I don't have enough oven safe skillets to make the amount I need for the shower. I'd like to make them in a couple of casserole dishes or large pyrex dishes and cut them into squares. Does anyone have any no fail recipes for eggs for a crowd?
 
Quiche? I always make these for brunches- veggie, broccoli and ham, spinach/bacon. I use a basic recipe and change the fillings.
My basic recipe is this : 3 eggs beaten lightly, 3/4 cup sour cream, 1 1/2 cups shredded swiss cheese, 1 cup shredded cheddar cheese.
Again I change the fillings to have variety- two of our favorites are:

6 slices bacon cooked until crisp, 1/2 c chopped onion, chopped mushroom and chopped green pepper (maybe 3/4 cup?) Saute veggies in 1 tbsp of bacon fat. Add bacon and veggies to basic recipe and pour into uncooked pie crust. (prepared or home made) Bake at 350 for about 35-40 minutes until golden brown.

1 1/2 cups steamed broccoli crowns, 6 green onions chopped (whites and greens) Add veggies to basic recipe above and bake as above. (You can add chopped ham to this successfully- but this is my vegetarian daughters favorite quiche. Simple dinner with salad and bread!)
