Fresh Pineapple- can you freeze it?

I just got back from Hawaii. Bought some fresh pineapple while there and really got too much to use it before it goes bad I think... Can I cut it and freeze it? Will it be ok when I thaw it? How to do it?

Yes you can cut it up and freeze it. We do that all the time. The only thing we've found that freezing pineapple does is affects how quickly it carmelizes when we're roasting it. But you're probably not planning to roast your pineapple.

I would cut it into chunks and put it into air tight ziplock bags before you freeze it.
