Freezing meals for vacation

We will be driving to our 12 day Orlando vacation. Our first 7 days in Orlando will be at Marriott villa. We plan on doing a few days in Universal and the Disney water parks before we spend 5 nights at the Poly. I am thinking of packing a cooler with some frozen meals. Aside from the cost, I don't want to eat out for 12 days. I plan to make meatballs and freeze them in a Ziploc. I will make sauce and freeze that in Tupperware. That is the extent of my freezer ideas. LOL. The only other meals I usually freeze are stew and chicken soup. I don't think we'll have a craving for either of those. Any other ideas for things we could freeze and bring?
 
Chicken stuffed manicotti. Enchilada casserole. (Google some recipes or search allrecipe.com.) Maybe some taco seasoned meats?
 
As you cook meals for the family between now and then, add some extra servings and freeze them. you'll have a buffet of entrees your family likes and you can buy frozen veggies, fresh fruits, breads, and dairy at the market once you arrive to build a full meal.
 
My mom always takes along pulled pork, calico beans and either lasagna or stuffed shells. Also chicken salad but I don't think that could be frozen.
 

Bring along a crock pot and a large frozen pork roast--One night have it with some taters and a veggie..Next night reheat the roast and shred it to make pulled pork sammys with BBQ sauce.

Make baked ziti.penne pasta...Top with some fresh cheese before serving.
Burritos freeze well.

Bring a ham and add in some sweet taters to the crock pot--let it coook while your gone.

Meatloaf freezes well also.

Shepards pie would freeze well also.

Salisbury Steak with gravy--Cook and freeze so you only have to reheat.

Chicken Parm serve over pasta with tomato sauce.

Pre cook chicken cut up and serve over fresh salad greens/ Chix Ceaser Salad.
 
Easy stuff we do, usually when we camp.

Sweet and Sour chicken or pork or meatballs. Serve with those microwaveable Uncle Bens rice packets.

Something with gravy - sliced turkey, chicken or pork. Serve with those packages of instant mashed potatoes that you just add boiling water to.

Pulled pork or beef on a bun - just buy buns once there and a premade salad.

Precook and freeze taco meat - can use to make taco salad, tacos, nachos.

Lasagna.
 
I usually precook chicken breasts and then debone and freeze them in a few Ziploc freezer bags. I freeze separately since I make enough for at least two different meals. The chicken can be used for so many different meals this way and it's a snap to throw something together because the chicken is already precooked.....chicken salad, chicken w/butter/garlic sauce over rice and broccoli, chicken cacciatore w/green peppers and tomato sauce.
 
I like to pre-cook and freeze chicken, spinach, and corn enchiladas. I put the sauce in ziplock bags to keep the tortillas from getting soggy.

I've never thought to freeze pulled pork. That is a great idea!
 
I forgot to mention that I pick up the aluminum take out pans from the dollar store (2 pack for $1). They don't hold a lot (it will take 2-3 of them for each meal). I can stick it straight into the oven then toss when we're finished!
 
Make sure it's ok with the property to bring a crock pot or other cookling appliances. It won't be ok on any disney property and fire code regulations must be followed in other properties. Even Microwaves are limited to designated areas in most chain hotels. Call to verify.
 
You can premarinate meats and freeze. I do this all the time camping. Pork or chicken would be good for this if you only have an oven or crock pot.

For example: Make teriyaki marinade or just use bottled. Pour over chicken breasts in a ziplock bag. Freeze immediately. While it thaws is the marinating time and you can bake for 30-45 minutes at 350. Or crockpot and shred the chicken. Add bagged salad and baked potatoes.

OP is staying in a Marriott villa for 7 days which has a kitchen. In the Poly, she won't be able to cook.
