FP start and end times

Can a new FP time begin when an old one ends? For example, one fast pass time is 10:05-11:05 and the next is 11:05-12:05. I thought I had read they can't "touch" at all, so the second one would have to start at 11:10. But I just made my FP selections and it allowed me to do that many times with no issues or complaints of overlapping times by the system. I just wanted to make sure that they didn't somehow error out or cancel themselves later.

That's how the FP system was originally set up. Disney must have tweaked return times back to being adjacent/concurrent without a gap.

I have never seen that before either. I'm like you, I would want to know everything is ok. The customer service number is usually quick and they know their stuff most of the time.
