FP+ and AP renewal from Gold to Platinum and question

Ok, I have a WDW trip planned for New Year's Eve (12/30-1/1), and my current (FL Resident Gold) AP expires in January and the renewal window starts in November. My intent is that I am renewing as Platinum and not Gold, and was curious to know how FP+ would work under this circumstance? Would I still be able to book FP+ for 12/31 at 60 days out or would it be the day when I renew my AP, especially since I'm doing a resort stay?

On that note, I am also visiting WDW December 6-7 and will likely have my AP voucher by then, so how would a renewal from Gold to Platinum work anyway? Also, how would the renewal work?

A renewal is for the upcoming Annual pass year not the current one. Meaning that if you renew to a higher level like the platinum it will start in Jan when your current pass ends. If you want to be able to access the parks during blackout days before your current AP ends you have to upgrade your current AP to platinum. Now perhaps you may get lucky and if you go to guest services to renew they will sprinkle you with pixie dust and upgrade your current AP at no charge but that is not how it actually works. Upgrading/Downgrading a renewal only affects the new AP not the current one.
