Four days and when in november?

I know its about a year or so away but I have two questions:

We are planning a trip in November. When in November (weeks) would you recommend?

This trip will be with my parents and will only be 7-8 days. We are planning four days for our first Disney trip. Budget and wanting to see other Orlando attractions and time to rest. My kids will be four and seven. I was thinking two MK days, One HS and One Epcot or a park hopper day between Epcot and AK? The other three or four days are for resort/relax, Disney Springs, Kennedy Space Centre, etc. Is November warm enough for a water park?

Animal Kingdom is our second favourite park (after MK). We can easily spend a day there. HS tends to be where we spend the least time, though it's got more to do now with Star Wars and Toystoryland, but it also has the longest wait times on rides so can be a little frustrating to us. Tends to be better for older to us, the bigger rides are bigger (like Rock N Roller Coaster). We like a few rides at Epcot but kiddo has little interest in checking out the country pavillions... so for us it's a few hours. Next week I think we'll be there from dinner to close and that's it. YMMV

I believe first week of November is Jersey week? So it might be quite busy. Any time around Nov 11 also tends to be busy with it being a day off in a lot of places. And of course American Thanksgiving is late November. I believe the week after that is usually a quiet week. Weather wise, probably a mixed thing, it could be warm enough for a water park (and of course the water is heated so unless it's really cold and they close the park, we'd be game to go).
 
Ok, thanks! My kids LOVE Toy Story and I think I am only getting my husband to Disney for Star Wars! My parents remember the Indiana Jones and I want the Muppet 3d. My youngest will want to see the Cars show.
 
Seeing it's your first time,I would spend a whole day at each park and get my money's worth.Your tickets are way too expensive imo,to not try and see and do everything you can in each park,as there are things in every park the kids will enjoy.I know the first time we went years ago,we walked around with that little map trying to find things and that took a lot of time .
 

Does Epcot have a lot of things for kids? I know the pavilions. I wasn't sure if I should split those parks? I dont think we are Pandora people....
