For those of you who have done a taco bar at a party. . .

Cheese goes on the bottom, then the meat, then salsa, then tomatoes, then lettuce and then sour cream to hold it all in place.

Salsa is just a convenient replacement when someone doesn't have taco sauce and chopped tomatoes. Very few provide taco sauce any longer and it's a shame.

However, when you're at restaurant, it's meat then lettuce then cheese - which drives me crazy because the cheese always falls off!

You have not lived until you've eaten a Rubio's fish taco! Battered fish, cabbage, white sauce, salsa, & lime on a corn tortilla...so so good! Rubio's is a Southern California taco place.
 

fish tacos are the best!!!!

We never use bagged pre-shredded cheese. We grate our own sharp cheddar. Tastes much better!

Fish tacos are delish. I'm sure many would call me sacrilegious because I don't put cheese or sour cream on my tacos. I hate dairy products.
 
Let me guess - you're one of those people that sprinkle shredded cheese on top of a huge mound of lettuce - just for the color? Then once you take a bite, it all falls off and there's so little cheese on it, you're just as likely to taste the cellulose coating they put on the shreds to keep it from sticking as you are to taste any cheese? :D

DH and DD just do meat and cheese with lettuce for color.
 
My DH puts the lettuce first then cheese then meat. He says the lettuce prevents the meat from making the shell soggy.

Sorry to derail OP's post, but it's all in good fun. I tease my boyfriend because if it were up to him, he would layer nothing, ever. He rather mix everything up and throw it in a shell and call it a day. He once made lasagna and mixed the cheese, meat and sauce together and it was so disgusting. I called it ABC lasagna, as in already-been-chewed. I make all kinds of tacos and I like my cold ingredients separate from my my hot and the lettuce is a buffer from the meat. If you haven't tried it, you have to buy Frontera simmer sauces by Rick Bayliss. He makes a few different taco and fajita and other and they are just excellent. The New Mexico taco is my favorite. They even sell it at Wal-Mart of all places now.

Mine goes - sour cream, beans/meat, tomatoes/lettuce, fresh shredded cheese, sliced jalapenos (fresh, not pickled), a dollop of sour cream to cut the bite of the pepper, Ortega taco sauce.
 
Meat, beans (if any), cheese, salsa, sour cream, lettuce. Lettuce goes on top. I don't want anything on top of it.

Here it is meat, cheese, onion, avocado, and sour cream. I am not a fan of lettuce on tacos and I can't have tomatoes so no salsa for me.
 
If sour cream is available, I like it on top because it kinda holds everything down and keeps it from falling out. If not I like the lettuce on top so my index finger can hold down the ingredients and the lettuce just provides a buffer between my finger and the messy ingredients.
