Congrats on the August trip!
I personally like the hopper and non-expired options -- we like to do the one park in the AM and another at night...then I always fear what if one of us gets sick, etc, I'd hate to waste the tickets.
But, that certainly adds on more $$, so if you want to save $, just skip those. No real need to add them -- they are just really nice to haves.
As for the regular
DDP -- I highly recommend it IF and this is a big IF, you really want to have a nice sit-down meal each day (it can be B/L or D). But remember, when you do a sit-down meal each day, that takes like 1-4 hours (depending where you go, travel time, showers, getting dressed, waiting for your table, eating, etc).
I like it b/c it forces us to relax a bit more and not rush, rush, rush. We can also get better food.
So if you were planning to eat a sit-down meal everyday anyway, and you can make the commitment to take that time away from the parks/rides, then it is definitely worth it.
But if not, you'd be better off just picking 2-3 restaurants and paying OOP for them and doing in-room meals or quick service instead.
There is also a new QS dining plan -- you get like 2 counterservice meals a day plus 2 snacks. It's cheaper than the regular plan but doesn't include any table-service places. My fear with this plan is that we'd end up eating a lot of cheeseburgers and pizza ... and although I like them, I don't want to eat them every day. IF you can do the QS at the resorts (drive to the different hotel food courts) -- you have much better options.
