I don't wear undies in theme parks at all. I got tired of getting wet on rides like Splash, Kali, etc., and ending up chafed from walking in wet clothes.
A couple of years ago I took the plunge and bought a few plain pairs of men's swim trunks from REI, the sort with the full mesh lining. These are now officially my theme park uniform. On top, I wear a short-sleeve quick-dry cycling jersey over a quick-dry sports bra. It's great not to worry about having to carry a spare set of clothing into the park in case I get splashed.
Men's trunks come in every possible size; they don't pigeonhole men the way they do women. You usually will want to buy the sort with a somewhat shorter leg; the "surfer jam" styles tend to hang all wrong on women; more like very baggy capris than long shorts. A drawstring is a must; you buy by the waist size, which is also the hip size, so you need a way to cinch the waist in.

What's up with the sizing...it's confusing to me. 
I buy Breezies from QVC. They are fantastic. All cotton but made of some fabric that doesn't hold the perspiration in. They come in great colors, briefs or high cut and wear really well. I live in NYC where summers are quite gross and never feel uncomfortable in them. They also never ride up. Check them out on the QVC website.
