I think burgers need fat. not 50% fat but usually burgers made with 93% lean ground beef are extremely tasteless.
I don't do frozen patties but 85% lean ground beef is about where I want to be.
My family restaurant use to every so often try to serve a healthier burger, lol and it never really went well, just finally decided to leave the burgers alone and offer turkey burgers, which I love also as an alternative
Now it can also be that I like a strong beef taste. I don't like to have to add ketchup, pickles. salt and pepper to flavor up some thing.
some fat adds excellent flavor. European butter , which I was I could afford more often usually contains more fat and less water is absolutely heavenly compared to the yucky stuff we use. taste is heavenly, mouth feel is creamier and in baked goods difference is noticeable.
If anyone gets a chance to taste cultured butter from Vermont creamery, usually sold in whole foods, try it on a piece of bread. it's 86% fat. I guarantee you will sell a kidney to get more. OMG!!
