There are microwavable healthy options. And that can of chicken can go a long way too.

Burritos - a packet of Old El Paso burrito stuffers, can chicken, cilantro, onions, cheese.
Nachos - chips, cheese, canned beans, onions, guacamole, jar salsa, can chicken.

Chili dogs - pour a can of chili on top, add onions and cheese.
You can even poach salmon in a microwave.
Some hotels have barbecues onsite.
I've seen a recipe somewhere for coffee mug meatloaf and coffee mug cake for one.
