Flying Fish Chef's Tasting Review

I hate to not create any suspense, but this was hands down the best meal of my life! The five glasses of wine it was paired with might have helped ;) My sister and I had the early seating (5:30) at the Chef's Table at Flying Fish on Monday the 23rd of February. It's five courses with wine pairings (full glasses, not tasting sized) It's about $150 per person including tax and tip, but totally worth it and I'm not a splurging type of person. Our chef was Daniel, and he was amazing, but is getting a promotion, so it was his last week there.

I'll just summarize the courses and add the pics I took and if you have any questions, let me know!

Amuse bouche: Arancini with celery root puree and spiced honshemeji mushroom. Wine: Jeio Prosecco

This was really delicious and full of flavour. There was a citrus butter on top and the green is micro-cilantro. We decided that even if this amuse and prosecco were the best offerings, it'd still be a fab dinner!

First Course: Maine Lobster Ravioli. This was really more of a ravioli with ricotta and quail egg with lobster cream and a huge side of lobster. Wine: Domaine Chandon Pinot Meunier

The ravioli was really tender and light to pair with the richer sauce. And who can say no to lobster? The basil added freshness and the tiny piece of pork belly was a nice treat. This wine was a nice light red to pair with this course.

Second Course: Smokey Tilefish with salsifis silk, smokey mussel infusion and crispy skin. Wine: Ramey Chardonnay

This dish was nice too, although with bit less wow factor. My fish was done to perfection and the accompanying sauces were great. The fish was extremely fresh (apparently caught that day!) The crispy skin was a bit tricky to eat because it broke apart in shards and was a bit messy. It was served with more microgreens and two tiny delicious scallops. The wine was refeshing and not overpowering to the fish.

Intemezzo: Lemon sorbet and limoncello :)

Main Course: Mint-laced Lamb Tenderloin with pulled lamb shanK (underneath), carrots and potatoes and a red wine truffle jus. Wine: Colpetrone Montefalco Sarantino Cattaneo (my sister thought it was hilarious when she found a spelling mistake on the back of this bottle so our server brought the label back to her as a souvenir!)

I was just starting to get full at this point, but this lamb was amazing. I prefered the tenderloin to the shank as it was extremely tender and flavourful without being as salty as the shank. It was a rich dish, but in a nice portion. Umm, we also liked this wine, they were all great selections!

Dessert: Blueberry sponge cake with raspberry mascarpone, berry mint salade, and strawberry basil sorbet. Wine: Broadbent Malmsey Madeira

I am a horrible person and forgot to take this photo! We were getting into conversation with the couple next to us and I completely forgot. But it was a nice light finish to the meal and all three parts stood up on their own. Also, I didn't think I liked port type wines, but this one was very nice. It was sweet and not too strong.

So that was it, and I wouldn't hesitate to go back for another special occasion! I feel like it was a good value for five courses with wine and I enjoyed every bit and would drink any of the wines again if I ever found them in my area.

Thank you for taking time to review this. I have considered it, I think the price is very reasonable, and I like the location, but I am always curious about the food! The pictures I'm sure don't do it justice, but it looks amazing! (and I think the pictures are great, I just can't smell or taste the food from a picture! ;) )

The pictures I'm sure don't do it justice, but it looks amazing! (and I think the pictures are great, I just can't smell or taste the food from a picture! ;) )

When I first booked it, I found very little info, so I wanted to put a bit more out there on the Dis! Especially because it was so good! I didn't take too much time with my photos, and just used my phone, but I wanted to take a quick pic at least and try to capture the wine in the background too!

Is it me, or was anyone else disappointed that the Amuse and the Main Course were not seafood?

My sister was disappointed/surprised, but I think it would be atypical for a five course dinner to have a fish course and then a seafood main course as well, no? I thought it was a good balance between fish and non-fish! Between the lobster ravioli and the tilefish, I think another seafood dish would seem too boring/rich/overwhelming/hard to tell apart, haha.
 
We've been to Flying Fish maybe 4 or 5 times and have always enjoyed our meals and are pretty adventurous eaters. Would you still recommend the tasting meal if someone in your party weren't a wine drinker tho?

It would still be a fun experience and it's interesting to hear all about what you're eating from where it was grown/caught/raised to how it was cooked and why it was done the way it was done. It certainly elevates things from just a regular 'nice dinner out'. I'd hope you'd get a price discount though :)

I didn't even know flying fish did a chefs tasting, but your food looks divine. Especially that lobster and lamb. Funny, we probably walked right past you as we had 5:30 regular reservations on the same night. It's a small dis world after all...

We've done the Chef's tasting 3 times with another dinner coming up on Mon. I so agree with you. It's good value for money. It's a wonderful dining experience not just because the food are so good but they've always made us feel very, very special.
 
Loved our meal at the chef's counter a few years back. In fact, I think I may have even preferred it to V&A - more manageable amount of food, less "fussy" if that makes sense- both in food & atmosphere. Thanks for reminding me...think it may be time to go back!!

Actually, the Prix Fixe dining rm at V &A's is $135 pp plus tax, tip, and alcohol. Wine pairings add another $65 pp - so substantially more than the chef's table at FF. Chef's Table at V & A's is substantially more.
Maybe you didn't realize that tax, tip, & alcohol was included in FF price?
I agree that V & A is sublime, but would like to try FF Chef's Table some time too. Their regular dining rm fare is very good.
 
Thanks for reading everyone, and clarifying the price. I wouldn't think V&As would be that affordable, but I guess it could be if you just went and ordered from the menu (can you do that?) and kept things very simple. But I think the point of this type of thing is to be a bit over the top :D
 
I just found an opening for this and decided to book it because we loved the Chef's Counter in Napa Rose and love the wine flight is included with this meal ! Thank you for tyhe great review and details too. I'll be sure to report back with more information after May !
