We are going next month to Epic, it's our first time and we need a rope drop strategy. We do have express pass for the day and early entry. Should we go straight to Dragon Racer's since that is the only ride w/out express pass? Or should we have to Super Nintendo first?

Yes, if you really want to do it, or the Toothless meetup, or if you want too do Mine-Cart multiple times. However, decent chance Mine-Cart won't open first thing. Actually decent chance Mario Kart also won't open first thing... Dragon Racers Rally is a carnival style ride, so if you don't manage to get on it, it's not a big loss.

Whatever you do, make sure you are able to stay through to closing. Good chance you will be able to reride even the heavy hitters with less than 20min standby wait in that last hour.

Super Nintendo World has super high waits in the morning, but the wait times drop significantly in the evening. I would hit Isle of Berk first if I were you.

It depends where you are entering. We stayed at Helios Grand and had a short wait for Ministry of Magic both mornings (under 10 minutes), then went to Berk for the winged coaster. If you are entering the main gate, then either Berk or Nintendo is a better option as its a shorter walk and you should have fewer people in front of you.

Just a FYI, while we were in Super Nintendo on lines we chatted with a few adults who were unable to escape the land to see other parts of EPIC because their young kids were transfixed. It seemed like a kid vortex, it has lots of colors and is very loud and with the vortex capabilities I would say to proceed accordingly 😉

It's hard to say. When I was there last, we didn't have express. Around 7pm we were able to walk on pretty much everything except Ministry of Magic (We went during Christmas and waited 5 hours for this ride. I am a huge Harry Potter fan, so I had to do it.) We did wait 30 minutes for Donkey Kong Mine Cart but went into How to Train Your Dragon area and everything was pretty much walk on. Both parts of the park have tons to do, so it is just really how much time you would want to spend in each and what time of day you want to see it. How to Train your Dragon area can get pretty dark during the night.
