Waiting to go to my WDW home again...

DH & I are taking our first adults only trip to WDW in Nov. It should be a great long-weekend getaway.
We should be there during Epcot F&WF. We were planning on not visiting the parks and just enjoying the resorts but I think we may have changed our minds. We are going back in 2012 for 3 weeks with the kids so we thought we'd buy annual passes this trip. We're also getting the dining plan this trip.
Any tips, tricks, hints to enjoying the parks and resorts without the kids? What are some must-do things on an adult only trip? I think we will have 3 sit-down meals. Where should we go for a romantic dinner/lunch?
If we decide not to get the annual passes this trip, can we really enjoy the resorts knowing the parks are so close?
Also thinking about the Tables in Wonderland card (if we don't do the dining plan). Is it worth it? I know it can be used on alcohol also (poolside bar
)
Can we use that with our DVC discount? What if we get the dining plan? Can we still use the TIW card for our beverages and appetisers? I believe the card is good for a year, so we will be able to use it next year with the kids...
