I got the recipe online and modified it.

3 eggs (slightly beaten)
1 lb frozen broccoli
.25 cup mayonnaise
one cup milk (I used reconstituted powdered)
salt and pepper to taste (the recipe I found used onion soup mix, but I don't like the additives so I just used salt and pepper)
Cook broccoli (I micro-waved for 3 minutes)
Mix everything together cook in 350 oven for 45 minutes.

that is the same way I make frittatas:confused3 .. and to think I thought I made something new

I love chick peas I use dried but can get canned. You won't need to cook them.

hot cooked Pasta, chick peas, 1/2 cup Parmesan cheese, 3 cloves of garlic minced, mixed together, sprinkle top with Italian parsley or cilantro.

Another one I make when ever i make the family taco's is
Cooked red kidney beans and Black kidney beans mashed with garlic cilantro and onion and jalepeno's mix all these together then build a burrito with it cheese and tomato

1 can of diced chilli tomato's
1 cup of brown rice cooked
put it all in a crock pot and cook for 4 to 6 hrs serve over brown rice or on it's own. Also for other family memeber that like meat can make it alone and then dice come chicken and cook that and add that to the family members that like chicken. I make this for church with chicken for the kids dinner night they eat it up with hot corn tortillas.
Nice thing about bean dishes you can make her a few and freeze them Canned beans are very easy to use and make lots of dishes from. I just find we eat so many bean dishes in the fall and winter it's cheaper for me to buy bulk and dried and cook as i need.

You can also use soy milk. It would taste fine. Also any vegetable stock would work. In a pinch, you can leave out the liquid all together.

That sounds good. I am currently soaking some pinto beans. I think I'll make them the way you suggested instead of the black beans.

Pinto's work great but the Black Beans work great for color when your feeding 25 kids under the age of 11 i found color of food works i made it once same way with navy beans tasted great but the kids were like ewe i'm not eating that.

Then off to the dentist we went :)

L ~ Kids had lunchables 1.56 it was nap time when we got home and it was these or stop at a fast food place . The did have carotts and dip with them . .75

D~ I cut the beef roast yesterday in half so today I will shread it and make BBQ beef sandwiches free
Buns .25 for 4 of them got them for 49 cents with coupon at target
Carrotts and patatos left over Free
baked BBQ beans 1.00 for can .50 cents for BBQ sauce
Corn on the cob 1.25 6 ears half the bag

Snack Oatmeal cookies Free

Total 6.26 I will add in if we have any other snacks today
 
Oh, I forgot to add in yesterday that we had 12 ears of corn w/ dinner. DD14 had a friend over, so I had to feed him too. Boy do teenaged boys have bottomless pits for stomachs.

dd 15 can eat like a champ and be as skinny as a rail (enjoy that dd cause it will all ketch up to you:teacher: ) My dd eats so much the week b4 .... it is crazy:scared:

I gotta ask-how do 6 people split one bagel with cream cheese? Also-'leftover Shepherd's pie?" You have a family of 6 and you have leftovers? How does that happen? Do you split the servings up or do your children just take what they want? My 11yo son eats 2 bagels with cream cheese and a bowl of cereal with milk for breakfast before I scramble a couple of eggs for him and pour him a glass of juice. He's all muscle, low body fat and eats again in 2 hours, lol! My husband could eat a whole Shepherd's pie(groundbeef, peas, corn and onions with mashed potatoes and cheese on top) in one sitting. He's a hard working man, all muscle and walks away from the table with 3 apples in his hand after dinner has been totally consumed-leftovers are rare in my home. There are three of us. If I tried to hold my son and my husband to the small meals you prepare, they'd move out. Seriously. My neighbors across the street have 3 daughters ages 17, 12 and 10. Their grocery budget for a month is $600 and they work at it. Dad is a stay at home parent and he's also a trained chef so he's very creative. I've gone grocery shopping with him and he's taught me a thing or two about keeping to a budget. Last question. Why do you do it? It seems very extreme so I'm curious.

the 2 oldest are not eating dinner with me they are at gmas. dh works out of town and I never eat bfast
 
WOW I have to say Anyone who can eat a WHOLE pie and 3 apples in one sitting can not be healthy ! WOW I don't cood those but I did do a chicken pot pie and my family of 5 yes all younger kids 8 and under ate them and about 2 hours later we had night time snack and off to bed . That amount of food to me seems VERY unhealthy . There is such a thing as over eating and eating when our bodies are truley NOT hungrey . That has got to be the case . Or maybe he dose not eat lunch ?

My kids really like Taco bake. I do use ground beef but you could leave it out. I am not good with recipes. I got this idea from one of those make a meal type places. (This one used to be a fairly decent price, but MAN has she raised the prices!) Anyway, 2c dried beans--pinto, kidney or those other white ones, doesn't matter--(which I cook on low in the crockpot until they are tender) about 1lb hamburger, browned; taco seasoning of your choice, diced fresh or canned tomatoes. Mix it all together in a skillet. I then serve this over tortilla chips(I make my own in the oven or when I am feeling really crazy in the fryer) and then top with fresh tomato, lettuce and grated cheese. It is quite yummy. In fact that is what we are having tonight. I wouldn't be able to do it to include in the $10 a day though. I think it works out to about $7 for the meal. Maybe a little more.

I keep trying to do the challenge and DS keeps throwing me off. Today, for example they were having english muffins with cream cheese, a banana and milk for breakfast. I had figured that at about $2. Then DS is still hungry so he has some oatmeal. And then some cottage cheese. And then some grapes.....You get the idea. Lunch same thing--peanut butter and honey on whole wheat tortillas(9 grams of fiber!! :woohoo: ) a whole nectarine each and then carrots, broccoli and dip. Again around $2. Then DS needs another whole roll up. Okay. And some yogurt, and another nectarine. And some crackers. Seems like he ate something else too. :confused3 This is after eating ALL the rest of the carrots in the bag BTW. I mean, I love that the kid eats healthy, but holy cow!

For dinner we are having the taco bake and milk. There is a lot of that recipe so I should be okay. :thumbsup2 I am going to start a new thread with healthy filling snack ideas because I am running out!
 
The kids wanted soft mall pretzels and i'm not in the mood to go over to the mall today. So I made some and the kids love them.

1 pk yeast
1 tbs sugar
1 1/2 cup warm water
4 cups flour
1 tsp salt

preheat oven to 425
Mix together and shape into what ever shape my kids like them as pretzel sticks
I spray the pan with pam then spray the pretzel shapes with pam again and sprinkle on kosher salt.

a batch of 15 pretzel sticks (they look like bread sticks) cost me 25 cents. And they can snack on them today and tommorrow and probably the day after.

I think this thread is great for people who want to work on stretching a $ and hopefully feeding their family a healthy menu at the same time. I do believe it can be done. Having said that... I don't think I could do it! :rotfl: But I think those of you who have deserve a high-five!!! :banana: As far as the post above... you're telling me that for breakfast, your 11 year old son "puts away"

and you're talking to mommiepoppins about eating healthy??? That would be breakfast and lunch for my 12 year old son.
And my husband could probably eat a whole shepards pie too... but he wouldn't - it would be extremely unhealthy to have such eating habits. And he's also hardworking :confused: Although I'm not sure what this has to do with being able to eat so much??? "my dh can eat more than your dh" :laughing:

dawn--I make those too except we boil our pretzel shapes before we bake them. Just drop them into boiling water (with salt in it) until they rise to the top, flip them over for a few seconds or so and then fish them out. It makes them a little more "pretzel-y"
 
Baking soda makes them golden and chewy. I think lye does the same thing...according to Alton Borwn! I wouldn't suggest it, though!
