Winter weather in Orlando is completely unpredictable. You could have warm days (80s) with cool mornings, or you could have mornings near freezing with afternoons in the 40s or 50s. Or you could have a little of both, or something in between.
Usually, the first week of February is pretty good in regards to crowds, but the Superbowl is in Tampa this year and the UG crowd calender has those days as 8s and 9s (on a 1 out of 10 scale). Also, Knox The Canadian Guy Moderater has reported that the NFL has already reserved blocks of rooms at Disney for the event. It will be busy, so no it would not be worth it for us to go this year - but we like to avoid WDW crowds like the plague!
As far as weather, it just depends. We went a couple of years ago during that time frame and it was cold and rainy. Our neighbors went last year and it was warm and sunny. It think it's just luck of the draw, it could be chilly one day and warm the next during that time of year in Florida. You will just have to watch the weather carefully before you leave.
