Sushi rice bowl
Microwaveable rice
Smoked salmon (or canned tuna - I prefer the salmon but budget/fridge space adaptable)
Chopped cucumber, avocado, red onion, and cabbage - avocado/red onion is shelf stable, cabbage can stay a few days out if it's a small head
Pickled ginger in a jar (optional - I love this, but if you use it, you have to like eating it

Soy sauce packets or a bottle of soy, depending
Extra s&p if needed
You can change that up for kids using chicken packets vs the fish and whatever veg they like
Mexican rice bowl
Microwave rice
Shelf stable chicken packets
Bean of choice
Queso jar
Salsa jar
Avocado, diced tomato, diced onion (and lettuce if you have it)
You can also take the above, use tortillas, and wrap it up into a burrito
And my favorite hotel meal is a salmon BLTA - smoked salmon, microwave bacon, lettuce, tomato, avocado, red onion, and a lemon mayo (lemons are shelf stable and useable in alcoholic and nonalcoholic drinks if you only use a part) - lemon juice and mayo combined with s&p on a toasted bagel with the rest on top
Others you could do with almost no work
- hot dogs (they can sit in the mini-freezer that sorta works b/c it wouldn't matter if it's frozen or not when you microwave it),
- the previously mentioned BBQ sandwiches
- pasta with jarred tomato or pesto sauces
- tuna and chicken salad sandwiches with the pouch product
- pizza bagels (toast the bagels before microwaving so they hold up for the kids and buy shelf stable pepperoni, so only the mozz needs the fridge) - this would be a big kid hit
I also buy every shelf stable produce item if I'm planning to eat in the room. You tend to not eat a lot of produce in Disney, and you tend to want light at night, so my kids had many days where a PB and honey dip with sliced apple and banana is what they wanted for the room dinner (with a smoothie - my offsite resort room always had a blender and iced beverages are so welcome after Orlando heat).
