Is it possible to book my 3 fast passes for 2 parks in one day? For example, I plan to do Animal Kingdom in the morning and then head over to Epcot for dinner and be there for the rest of the evening? Is it possible to get 2 fast passes for Animal Kingdom and 1 fast pass for an Epcot ride?
 
Nope. Must book all 3 FP in one park. Once those are used up, you can book a 4th at any of the 4 parks

Well, you can book just one or two in the first park, but yes, you would have to use those (or let them expire) before booking on at the second park.

Right. I guess what I meant was, you can't book a FP in a 2nd park in advance. Would have to wait until that day and the window for booked FPs passing
 

Any FPs booked in advance have to be at the same park on the same day. Once you get there, you can book additional ones at a different park after the prebooked ones expire.
 
You can book 2 FP+ for AK in advance and then as soon as you scan your MB or card at your first FP+ you can then look for a FP+ at Epcot via the MDE app.
This is what I have done in the past when I went from HS to Epcot and will be doing it again for my upcoming trip.

But I assume you had really wanted to book all 3 in advance split between 2 parks and that you cannot do.
