OP, I'd take this advice. I didn't read your OP very thoroughly in the beginning. Busing to BWI or BC, then walking a short distance to WS and your restaurant would be a shorter walk than busing to the front of EPCOT and walking all the way around to WS from there.
As for a transportation map, I'm sure they exist, but the options change so often they get outdated quickly.
Here's a cliff notes version of WDW transportation (there are exceptions to this BTW):
- There is park to park transportation between all parks, whether it's buses, boats or monorail
- There is resort to park transportation and vice versa
- With some exceptions (which I'll list below), there is generally not much resort to resort transportation.
Exceptions:
- The resort loop of the monorail system (Poly, GF and CR are on this)
- MK boat system. WL, FW and CR share boats and can be reached directly from each other via the boats; Poly and GF likewise share boats and can be also gotten to from each other via boats
- The EPCOT area resorts (BC/YC, BWI and Swan/Dolphin) are all on the boat system going from EPCOT to MGM and back, and are all within a fairly easy walk of each other
