So I am looking into the Fantasmic! Dessert Party and VIP Viewing Experience for our DHS night in June, and I see several reservation times, ranging from 7:40-8:10 p.m. Is there any particular reason to choose one time over another for this?

It's not a "party." (You'll note that there is no "party" in the name.)
You just pick up the desserts and drinks and go pick a
spot to sit in the Dining Pkg. seating area.

Look at the Fantasmic! start time(s) for your night and choose
a "reservation time" for as early before the show start-time as they offer that night.
(The earlier you are IN the theater, the more choice of seats you will have.)

Okay, well whatever about the name of the event... the question still stands: is there a reason to select one reservation time over the others? Is it worth getting an earlier one to grab better seats, or is there any other reason to select a 7:40 as opposed to 8:10?

I provided that info above.

Okay, thanks, looks like you added to your post while I was responding...

Not to belabor this, but my question is really looking more for an opinion on the matter: is it worth reserving as early as possible/do you recommend getting there with a Dessert reservation as early as possible? In other words, is the reserved section going to fill up enough that it's worth the extra wait time in our seats?

You can arrive at any time before the show, you can come earlier or later than the selected time.

We've done the dessert package twice and had a good experience both times (although the desserts weren't the best). We liked the reserved seating area and not having to mess with a dining package. IME, if you get there 30 minutes before the show, you'll be able to get a good/decent seat. I actually like sitting about halfway up in the section, and on the aisle, so I can make a quick getaway at the end of the show and not get stuck behind everyone exiting.
